Description: Harvest: second half of September, hand picking in crates. Vinification: in purity. Crushing and soft pressing, fermentation of the must (14-16°C) in steel. Six months of ageing the lees. Sensory analysis: marked acidity favouring the aromatic and taste freshness. On the nose it gives delicate expressions of Sicilian citrus fruits, peach and white flowers; on the palate it has mineral and herbaceous references and a pleasant sapidity that contributes to its exceptional shelf life.
