Description: In the white wine-making process, the must is promptly separated from the skins to accentuate its characteristics. The wine, crafted using the Martinotti method, is transferred to sparkling wine autoclaves where it undergoes fermentation with selected yeasts for approximately 4/5 months at a temperature of 18°C. Subsequently, it is cooled to -4°C for 8/10 days to stabilize before being filtered and bottled.
