Description: Harvested manually in crates in early October. After a meticulous selection of grapes, fermentation occurs on natural yeasts at controlled temperatures in steel tanks. Clarification is followed by racking in the first week of December. It undergoes a long maturation for about 6 months in steel, with intermittent rackings, and bottle aging for at least 3 months.
