Description: Produced 100% with Pinot Noir grapes, vinified with soft pressing, fermented at controlled temperatures. The pale pink colour results from the very short maceration of the skins, which are soon separated. Ageing in steel tanks for over 10 months and maturation in the bottle for 3 months then follow. Dry and elegant sparkling wine with a fine and persistent perlage. The hints of cherry jam, wild strawberry and raspberry leave room for a note of yeast. Extraordinary aperitif, for the whole meal.
