Description: Not the Classic Sauvignon, this Sauvignon does not have the typical boxwood scent. It is harvested late in mid-September to have a higher alcohol content and a greater structure of the wine body and a brighter colour. Once the selection of the bunches and the harvest are over, the grapes in the crates are pressed at a maximum of 0.8 bar and the flower that comes out is left to ferment at a controlled temperature for 10 days.
