Description: Centomani is their special Sangiovese. A small production from a single vineyard of 3500 metres, with 4/6 bunches per plant. The grapes are harvested and cracked by hand, followed by a long fermentation with indigenous yeasts. With a non-traditional vinification, most of the grapes remain intact and gradually release the must during the fermentation process. Aged in French oak barrels for about a year, then in bottles for another year.
