Description: Calè, which in the Romagna dialect means sunset, is their interpretation of the Sangiovese from the Romagna area. It is fermented at about 22 degrees, vinified for about 10 days, racked off and is characterized by a malolactic fermentation simultaneously with the alcoholic one through co-inoculation, an oenological choice to allow the wine to take on a very specific structure. Various bâtonnage have also been made.
