Description: Bright straw yellow color, intense aromas reminiscent of fresh bread and fresh fruit with smoky notes. Persistent, with a fine and elegant perlage. The grapes are cultivated in the Partinico area at about 650 meters above sea level. Manual harvesting is employed. The grapes undergo soft pressing, fermentation at 14-15°C, and refermentation using the champenoise method. Remuage is then carried out in the subsequent months. Dégorgement is done after 40 months.
