Palmento Costanzo was founded on the northern slope of Etna, in Contrada Santo Spirito, in the hamlet of Passopisciaro, within the Etna Natural Park. Around the ancient nineteenth-century millstone, used until the early 1900s by local winemakers, extends the centuries-old vineyard cultivated organically by Palmento Costanzo. The approximately eighteen hectares of vineyards in the characteristic terraced arrangement are located between 600 and 800 meters above sea level, in the Etna DOC area. Most of the vineyards are located right in Contrada Santo Spirito; over the years small portions of vineyards have been added in the districts of Feudo di Mezzo, Bragaseggi, Zottorinoto and Cavaliere, the latter on the southwest slope in Santa Maria di Licodia and at an altitude of 1000 metres. The cultivated varieties are native vines that have made Etna famous throughout the world: Nerello Mascalese, Nerello Cappuccio for red wines, Carricante and Catarratto for white wines.
